Bacon-Wrapped Goat Cheese Stuffed Dates


- 12-18 Medjool dates, pitted
- 1 12 oz. bottle Great Lakes Brewing Company Christmas Ale
- Strips of bacon, cut in half (12-18 total pieces)
- 4-6 oz. mild goat cheese
- 1 Tbsp local honey
- 1 tsp fresh cinnamon


In an air-tight container, soak pitted dates in Christmas Ale overnight, or for a few hours in the refrigerator. With a hand mixer, blend goat cheese, honey, and cinnamon. Remove dates from liquid, and place a small amount of the goat cheese mixture in each. Wrap each date with a section of bacon, and secure with a toothpick. Arrange dates on a baking sheet. Preheat oven to 450 degrees F. Roast for 15-20 minutes or until bacon is brown and crispy, turning halfway through. Serve warm.
