Salad:
1 bunch baby spinach
1 C sliced strawberries
1/2 white onion, thinly sliced
1/2 C crumbled goat cheese
Sprinkle of salt
Sprinkle of black pepper
4 strips of bacon, cooked and crumbled
Dressing:
1/2 C extra virgin olive oil
1/4 C balsamic vinegar
Juice of 1/2 of a lemon
2 tbsp honey
Hearty splash of Strawberry Pineapple Wheat (to taste)
In a large bowl, add spinach, strawberries, onion, and cheese. Sprinkle in salt and pepper. Toss, and top with crumbled bacon.
For the dressing, use a mason jar with a lid or any sealable container. Add olive oil, balsamic, lemon juice, and honey. Shake vigorously. Then, add a splash of Strawberry Pineapple Wheat. Shake again and sample, making adjustments to taste. Drizzle on salad or serve on the side.
